Off to North Carolina!!!

Bright and early tomorrow we are off to the great state of North Carolina to see Andrew's brother and his girlfriend! We are very excited about this trip and hope to be able to take Calleigh to the zoo and do many fun things on this vacation! I am just pumped to get out of town for a little while! As soon as we get back I will post what all we did along with lots of pics for your viewing pleasure. Keep us in your prayers for a good time and for a safe trip! See you Tuesday!

Vacation Highlights

So, this weekend we (as in most of the Wibbeler family) went to Kentucky to spend the weekend at Land Between the Lakes. When we arrived with Andrew's grandparent's on Friday night we gathered with family and played games and hung out. On Saturday, we went shopping at some of my favorite stores, especially Little Lambs, and then we got ready to go to a show called Variety! at the Badgett Playhouse:


Calleigh LOVED the show, clapping her hands and dancing the whole time...so much that even the singers and dancers talked about her backstage during the whole show! They stopped us on the way out just to tell us that and talk to her.......she is so spoiled and such a little ham who is ALWAYS the center of attention! Maybe she has a future in singing and dancing?!?

We then went to eat at the famous Patti's (we actually ate at Mr. Bill's, but just a different building with the same food) and it was so good!! Here is what I had:

Appetizer:

Patti's Loaded Potato Chips
Homemade chips smothered with chili, bacon, cheeses, diced tomatoes, green onions and red peppers. Served with sour cream.

Ella Mae's Chicken
Ella Mae, who was a wonderful cook back in the 80's, first came up with this dish. It keeps changing a little every few years, but keeps it's basic great taste. For our 30 year celebration we changed it by adding freshly grilled asparagus over our grilled chicken breast. This is topped with slices of black forest ham coming off the grill and sauteed mushrooms. Then covered in our homemade cheese sauce. This really is a great chicken dish and it's MY favorite.(this came with a loaded baked potato and a house salad)

Later that night we went to the elk and bison prairie....here are a few snapshots from that night:







The next day we headed home and were glad to be there. Sometimes it is nice to come home....to your own things. But the vacation was nice too! I took Calleigh to get her bangs trimmed yesterday for the first time and she looks all grown up now! I will get a picture up soon!

If you are looking to just get away for a few days this is a vacation I would recommend....and check out the condos at Green Turtle Bay...they are quite nice too!

Kentucky Lake, here we come!

This weekend we are heading to Kentucky Lake for a relaxing weekend with the Wibbeler family. We are celebrating Andrew's Grandparent's 60th Anniversary. We are leaving tonight and heading down. We are going to the Elk and Bison Prairie in the morning, shopping and swimming in the afternoon, then we are going to a variety show and dinner at the famous Patti's for dinner. We are getting up Sunday morning, having breakfast, and heading home. Andrew and I are pretty excited to have a weekend away from home! Yeah!
