Crockpot Meatloaf and exciting news!

So, Andrew and I are still trying different things from our new cook book. Andrew LOVES meatloaf and I am not the biggest fan. However, I decided to try this just for him, and it was actually pretty good. Below is the recipe.

Crockpot Meatloaf

2 lbs of ground chuck

2 eggs

2/3 quick cooking oats

1 pkg dry french onion soup

1 cup of ketchup(reserve 1/2 c. for topping)

Combine and mix ingredients in a bowl. Spray your crockpot with Pam. Form your mixture into a loaf and place in crockpot. Top with remaining ketchup. Cover and cook on low for 6 1/2 hours. Let cool somewhat before removing from crockpot. Enjoy!

We ate this with Over Roasted Potatoes. All you do with that is cute up potatoes into cubes and follow the directions on the back of the onion soup box. Just a little olive oil and the mix, bake, and they are so good! We also had rolls and green beans and it was so good! You can't beat a good home cooked meal that did not take long to cook and was not very hard either!

My best friend called yesterday to let me know she just found out that she is expecting her second child! It was a surprise, but they are very excited none the less. I am excited for them too!
